Mussels In Lemon Garlic-Butter Sauce

Ingredients:
• 1 tablespoon butter
• 1/4 onion (finely chopped)
• 1 teaspoon garlic (fresh and crushed)
• 1/2 cup dry white wine
• 1/2 cup cream
• 8 mussels (half shell)
• salt
• black pepper
• 1/2 lemon juice (and zest)
• 1 teaspoon fish spice
Method:
Melt the butter in a large skillet (with a lid) and saute the onion and garlic until soft.
Add the white wine and simmer until reduced by two thirds – add the cream and fish spice and simmer for 2 - 3 minutes
Add the mussels and cover with the lid. Overt low heat, steam the mussels until cooked (about 8 – 10 minutes). Remove from heat and season to taste with salt and black pepper. Stir through the lemon juice and finely grated zest.
Serve with homemade bread and garnish with micro herbs.
